Health: My Banana Bread Pumpkin Spice Overnight Oats

Now that it’s fall, all I want to do is bake and eat warm, yummy treats.  And yes, I do that in moderation.  But this recipe right here is so decadent, you’re going to think you’re eating treat.  But it’s totally healthy and you can even modify it to make it however you want.
One of everyone’s favorite thing’s about fall is pumpkin spice.  Now, I’m not normally one of those people, but this is the perfect combo of creamy banana, comforting spices and deliciousness.  So follow my recipe below and enjoy 🙂
All you do is take all of the ingredients below, put them in a jar, mix them up, put it in the fridge overnight and heat it in the microwave for 30 seconds in the next morning.  You could also just add all these ingredients to your normal oatmeal and enjoy in a bowl like the picture above.

Banana Bread Pumpkin Spice Overnight Oats

1/3 Cup oats
1/3 Cup unsweetened vanilla almond milk
1 shot (ounce) espresso
1/2 TBSP honey
1 scoop of your vanilla protein of choice
1/4 tsp pumpkin spice (see my DIY pumpkin spice recipe below)
1/3 banana (mashed)
a dash of salt
1/2 TBSP chia seeds
1/2 TBSP ground flaxseed

My DIY Pumpkin Spice Recipe 

3 TBSP cinnamon
2 tsp ground ginger
2 tsp nutmeg
1 1/2 tsp allspice
1 1/2 tsp ground clove
Mix all ingredients together and store in container, ready to use in all your fall baking!
